What you're looking at when that happens is automatic delayed bidding, called sniping. There are websites where you can feed in the ebay item number, ending time and your max bid and it will do the rest. These bids usually come in during the last five seconds or so and it's impossible to keep up with them if several are going on at once. It's better to have a healthy bid in place during the last hour or so.
