So I'm sure everyone has a favorite summer treat that they love to make. Let's hear 'em! I mean sure, there are treats that you can just buy, but why not have a bit of fun making them too?

I'll contribute three:

Chocolate Pudding Parfait
Chocolate Peanut Butter Parfait
Cheesemallow Snacks

The chocolate pudding parfait is one I got ahold of before last summer. Simple and easy to make and very low calorie as well. Basically pudding with cool whip. I like to dye the cool whip and add sprinkles. The original recipe called for peppermint extract, but I don't like it so I've never used it. The chocolate peanut butter parfait is a recipe I got ahold of yesterday via mom so I'm still perfecting it but it's basically chocolate pudding and cool whip with peanut butter layers. Slightly more calories than the basic chocolate one because of the peanut butter.

The third one I'm quite sure no one's ever heard of before (besides Fanchan, whom I've told), but my great grandma would make them when mom was little and staying the night. Mom made them a few years or so ago for us kids. All you need are saltine crackers, yellow American cheese, and a marshmallow. And don't worry, everyone who hears that says "gross" before trying them. A cheesemallow snack is similar to a s'more: you've got your crackers, your cheese (which replaces the chocolate), and your marshmallow.

I haven't had one in a long time, but I LOVE banana boats.


They're another campfire snack that my mom taught us to make in Girl Scouts (she was my troop leader for ten years).



You take a banana and peel back one flap of the skin (though, don't pull it off all of the way), on the inside part of the U shape. You then scoop out a portion of the banana, like hollowing out a canoe, eating the parts you scoop out of course. Then, you fill in the hollowed part with chocolate chips and mini marshmallows. Fold that flap of skin back over and wrap the banana in tinfoil. You then stick it in hot coals, like you would for a baked potato, and wait a while for it to heat up. After an appropriate amount of time, you open them up, pull back the flap, and dig in to the gooey goodness inside.



I've also had a lot of soft-serve ice cream this summer, heading out to the Dairy Queen with my best friend almost once or twice a week for a twist in a cone. But I suppose that's nothing special :p



Funnel cake's a good one, too, but I never have that outside of amusement parks. Which reminds me, I'll have to get one at Cedar Point this Wednesday...

You know, perhaps we should trade off. I'll make the cheesemallow snacks and you make the banana boats. I remember you talking about them when we had that cookout over the Memorial Day weekend
