I actually like just eating the turkey, so I don't have many recipes to speak of.
But every once in awhile I make turkey/rice soup (turkey broth, diced turkey, cooked rice, any vegetables you want) or hot turkey open-faced sandwiches (diced turkey in turkey gravy - pour over toast).

I make BBQ pulled Turkey in my crockpot. Shred the turkey into various size bits add BBQ sauce and cook on the lowest setting for 2-3 hours. Delicious and tender.

Kentucky Hot Brown Casserole
Typically I use Butterball deep-fried turkey lunch meat, but real turkey works great too. One of my favorite dishes, regardless.
I use this recipe: http://allrecipes.com/recipe/kentucky-h ... etail.aspx
However, I make some changes:
No tomato or mushroom (not a fan, no way)
Instead of parmesan cheese, I use shredded sharp cheddar. When it calls for 6 tablespoons, I use the whole 1/2 cup and then add cheese on the top before the casserole goes in the oven.
